2002. The retrospective year.
2002 was a very special year for us, because for the first time in a long time we had no new items
on the menu. This was for various reasons. Firstly we wanted to have a year of reflection and to decide in which direction we wanted our cuisine
to go after twenty years. Thanks to the analysis we were conducting for our trilogy, we were able to reach an understanding of what we had done
up to then. We also needed time to organise and write the hundreds of pages making up these books. Combining this work with the creative process
would have involved an effort that would have been difficult to keep up. Finally, we wanted to make this season a celebration. Many of our customers
had asked to try dishes from other years, and this was a perfect excuse to lay on a retrospective.
