1993. The new kitchen.
Following the car park and patio alterations, one of the decisions to be taken when elBulli was established
as a limited company was to have a new kitchen built. So we went to see some of the most up-to-date kitchens, such as the one belonging to the Troisgros
brothers in Roanne, which at that time was a model to aspire to. By 1992 we were quite clear about the features of our future kitchen. There then began an
exciting period during which we drew up plans and projects, with the collaboration of the architect, Dolors Andreu, and the contractors, Maquinarias García,
for the area of our dreams: we made models, we decided to use materials that were not commonly used in kitchens, we included some sculptures by Xavier Medina
Campeny, which today are almost a symbol of our kitchen, and so on. The result was an area of 325 m², with all the necessary facilities to enable
us to work in a way that was completely new to us, under the best conditions possible. The elBulli that we know today would not have been the same without
this kitchen, which leads us to state that it has been an essential element in our evolution.
